  • - 1 Ginger Root
  • - 500 grams of salmon
  • - 750 ml fish broth
  • - 150 g of broccoli
  • - 150 grams of Japanese Enoki Mushrooms
  • - and a third of a teaspoon of Combava
  • - 1 tablespoon of sesame oil
  • - 2 Chillies
  • - Coriander
  • - Salt


Prepare a fish broth (use salmon's heads) filter it, put in a pot and bring to boil, add a third of a teaspoon of kaffir lime, ginger and chilli. Cut the salmon in half lengthwise and dip it in the broth, let it cook 10 minutes over low heat. Remove the salmon from the broth, let it boil again and add the broccoli, cook 5 minutes. Divide the soup in dishes, add the mushrooms, the salmon, the broccoli and garnish with coriander leaves.
