Ingredients:

100g red or green Azuki,

800ml water,

1 shallot,

½ teaspoon salt,

5 pieces of dehydrated sliced ginger (or fresh),

1 teaspoon turmeric powder,

1 tablespoon of baie rose,
-
fresh coriander
Preparation:
Wash the adzuki beans and put them in a pot with the water, sliced shallot and ginger. Cook for about 45 minutes until the beans are soft and the cooking water has reduced.
Turn off the heat, add the turmeric and a tablespoon of extra virgin olive oil.
Put the cooked azuki into a bowl, add the Baie rose and fresh coriander.
It can be served on its own or with a side of rice or quinoa.
